Throughout the Caribbean folks celebrate Easter with hot cross buns, bun & cheese, fish cakes, kite flying, go-karts, marbles and more. Yes there are egg hunts and bunnies in baskets too. So what’s a non-religious, frugal, vegan girl to do? Plenty!!! Let me tell you, there’s LOTS about Easter that I dig. We all crucify ourselves at times. Wouldn’t you agree? More importantly we resurrect ourselves over & over again. Sure do! All the old-fashioned toys/games, culinary traditions, family time…. ooooh! For me it’s the beginning of a new year so that’s what I’m celebrating. Spring cleaning, decluttering, fasting (3-5 days) are in order before the equinox. Small gifts for the children in my life too. I even make my own “fish” cakes.
